  1. Absolutely delicious. I used recipe #110331 for the onion soup mix, and potato water saved from making mashed potatoes instead of the water. Served with recipe #148484, frozen peas, buttered carrots, green salad and dinner rolls to sop up the gravy. Dessert was recipe #80681. I am going to make the patties again and turn them into hot hamburger sandwiches served with French fries and cole slaw. Filed in my favorite recipes binder. Thanks for posting.

  2. I was looking for a good comfort food meal for dinner with the ingredients I had on hand. This dish turned out delicious! The only thing I changed was used whole grain cracker crumbs instead of bread crumbs because it was quicker and easier to crush those rather than toast and crumble bread. Tasted just like one of my grandmother's meals from my childhood. My 5 year old daughter ate it up, too! The gravy was great on mashed potatoes. Can't wait to share the leftovers with my sister today for lunch! Thank you for the recipe!

  3. This is what TV dinners aspire to be! Good... but not fabulous... I'm thinking it might have been the few changes I made, but maybe not... I used beef broth instead of water and added a can of mushrooms... doubled the gravy since we really like our gravy around here. The last step with the gravy took a lot more water than called for to make it a gravy consistency... Served it with mashed potatoes...I might make this again but it isn't going in our keeper box...

  4. Bravo! Comfort food at it's best! We loved this recipe, and it will be a regular beef dish in our home. I love that is is actually quite healthy, as well as delicious. I think next time, I will replace the breadcrumbs with quick oats (that's how I make my meatloaf) to make it even healthier and more filling. I made this exactly as written, and I would not change a thing. I served it over simple mashed potatoes which were seasoned only with a bit of garlic powder (do NOT add salt to your potatoes, as this recipe is already salty enough!)Thanks for this recipe...I felt like I should feel guily eating it!

  5. DH loves this sort of dish, so I gave it a try and it was very good. I usually chop some onions and just mix it up with the beef. I did add chopped onions to the beef, subbed wheat germ for the breadcrumbs and forgot the Worcestershire. I think next time, I'll skip the breadcrumbs and eggs, as I thought they seemed a bit dry, but I'm keeping the onion soup mix part, as it adds a great flavor. Thanks for a good variation on a classic comfort food!

I hate to bake (almost as much as I hate to vacuum!), and I'll go to great lengths to avoid having to make cookies.

FAQs

Why add milk to a beef patty? ›

Adding bread and milk to the beef creates burgers that are juicy and tender even when well-done.

How to improve hamburger patties? ›

Add your flavourings. The world is your oyster when it comes to flavouring your burgers. Grated onions, finely chopped spring onions, crushed garlic, ground spices (cumin, coriander, ground chilli, fajita spice mixture, etc), mustard, chopped fresh or dried herbs, ground black pepper – pick the flavours you like.

What are the best onions for burgers? ›

While there are various types of onions to choose from, sweet onions emerge as the clear winner, bringing a pleasant bite that perfectly complements the savory elements of your patty, the tanginess of the condiments, and the softness of the bun.

What is the best way to cook hamburger patties? ›

Cook your burgers in a flat pan over medium-high heat. The patties should sizzle when they hit the pan, and when you flip them, you should see a nicely dark, golden-brown sear on the underside. That's the sign of a good burger!

Why put baking soda in hamburgers? ›

However, by gently tossing a baking soda solution with the meat (about ¾ teaspoon baking soda to 2 tablespoons water for 2lbs of grind) and letting sit for 15 to 20 minutes before cooking, beef loses less liquid, browns faster and tastes better.

How do you make beef patties hold together? ›

Some ingredients like grated onion, a little flour, eggs or breadcrumbs can be added to the burgers for them to hold together.

What is the secret to juicy hamburgers? ›

A little extra moisture helps even well-done burgers stay juicy and tender, even if they're made from 90% lean ground beef. Mix in 1/4-1/2 cup water per pound of ground beef before forming your patties to reap the tenderizing benefit of H20. Some chefs tuck an ice cube into the middle of the patty for the same effect.

What do restaurants use to season their burgers? ›

Restaurants tend to use a lot more salt than home cooks because they know salt brings out flavor in food. I expect they use freshly ground pepper also. Many are likely to mix their burgers lightly with Worcestershire or garlic powder. Use what tastes good to you.

How long to soak onions for burgers? ›

Just peel and slice the red onion as called for in your recipe, then submerge them in a bowl of cold or ice water. Let them sit for at least ten minutes, stirring once or twice, before draining and using them in your recipe. For added flavor, you can also soak the onions in lime juice, lemon juice, or vinegar.

What kind of onions does McDonald's use on Quarter Pounder? ›

Ingredients: 100% White Onions.

Can you put raw onion in burger meat? ›

"Hamburger pattie surrounding a slab of uncooked onion. Oh, by the way, the onion will cook inside the burger, mellowing the flavor of the onion and keeping the burger moist. Each pattie is about 1/4 pound of meat surrounding a 2 inch diameter 1/4 inch thick slab of onion. Even my kids love these."

How to season burger patties? ›

In a small bowl, combine 1 tsp sweet paprika, ½ tsp smoked paprika, ½ tsp garlic powder, ½ tsp onion powder, ¼ tsp freshly cracked pepper, ⅛ tsp cayenne pepper, and ½ tsp salt. Stir the spices together and then they're ready to use! Get ready for the juiciest, most flavorful burger ever!

How do you keep hamburger patties moist? ›

Salt draws out moisture from proteins, which is a good thing when brining whole proteins like steak. With ground meat, salt can draw out too much moisture, leading to a dry, dense burger. So sprinkle the patties with salt just before grilling to create a juicy interior and a deliciously salty crust.

Is it better to pan fry or bake burgers? ›

Baked burgers are a great, nearly hands-off cooking method that won't fill your kitchen with the smell of frying beef. Pan-fried burgers, on the other hand, have the benefit of a tasty sear from the cast-iron skillet. And, if it's hot out, cooking burgers on the stove-top won't heat your house as baking burgers will.

What does milk do to ground beef? ›

The calcium-rich properties of milk react with enzymes in the meat to gently soften the proteins. Whole milk (not reduced fat), buttermilk, and yogurt all get the job done – with a special nod to buttermilk and yogurt for their optimal tenderizing acidity levels.

Why do you add milk to meat? ›

Milk-braising relies on lactic acid, which tenderizes meat and inhibits dryness. In an acidic environment, meat pulls in more moisture and softens more quickly. Then there are the sugars present in dairy, which round out the flavors of whatever's being braised.

How do you keep beef patties from falling apart? ›

Chill Out. Before you start grilling, it's important to chill the patties in the refrigerator for at least 30 minutes. This helps the fat in the meat solidify, which in turn helps the burgers hold their shape on the grill.

How do you keep beef patties moist? ›

Secret Ingredients – My secret to juicy burgers is mixing olive oil and Worcestershire sauce into the meat prior to cooking! This locks in the moisture and amps up the flavor. Try it and taste the difference. Seasonings – I keep it simple with sea salt, black pepper, and a little garlic powder.
